Steamed crystal buns are a traditional Chinese snack. As the wrappings are made of well-kneaded dough, the buns are small in size, with visible cream-color fillings through the oily wrappings. The buns, like small crystal balls, are really inviting.
To make the buns, mix fine dough with farine at a ratio of 4: 6. When completely mixed, pour some boiled water into the pot, re-boil it slightly with simmering heat. Slowly put the mixture into the pot, keep stirring while pouring in. Cover the pot and simmer it for about one minute. Take the dough out, add lard (50g for 500g flour) into the mixture, and knead it hard. Cover it with a wet cloth. Knead the dough into small balls about 10g each. Press them flat and round, add some fillings, shape them into small buns. Steam the buns in steamers. Then, shiny crystal buns are ready to be served.
