From the name, we can refer to a famous figure Su Dongpo, an excellent poet in Song Dynasty.
It is said that Su offended the officials by writing the poems, so he was banished to Hangzhou. During this period, he still continued his literary work as well as cooking hobby. In order to take care of these two things, he planned to braise the pork and slowly stewed it on a low heat. This process provided him enough time to write poems when he was cooking for a meal. Because the main material used in his most famous dish is pork, so it got the name “Dongpo’s pork”.
And this dish was first launched in Huangzhou, then spread to Hangzhou, the capital of the Southern Song Dynasty, flourished, and then became one of Hangzhou's most famous dishes.
