Oil Cake of North Shaanxi

       The oil cake of North Shaanxi is made of millet and dates by deep-fried in vegetable oil. The cake tastes sweet, aromatic and fresh. It is a local specialty in north Shaanxi. The oil cake is usually made during the Spring Festival and other festivals to entertain friends and relatives, especially on wedding feasts. The cakes are presented on plates, with ten pieces on each plate. They are best eaten with sugar and glass noodle soup. The oil cake, golden in color and soft in texture, stays good for a long period of time, with no change in color or quality. The cake is absolutely a natural green food.
